Soak the dates in the brewed coffee for about 10 minutes.
Place oats in food processor and process until nearly the consistency of “meal”.
Add the soaked dates and the rest of the brewed coffee to the oats and process until well combined.
Add the rest of the ingredients, and process again.
Transfer to a bowl and place in the freezer for 15 minutes or until set.
Remove from the freezer, scoop the mixture into 20 truffles and roll them in cacao powder.
With the blender running slowly, stream some Udos Choice Ultimate Oil Blend in to emulsify.
Storage in an airtight container in the refrigerator for up to 10 days.
