Beta carotene is a natural vitamin A precursor found widely distributed in fruits and vegetables, in which it forms part of their yellow and orange pigment. Carrots are one of the richest sources of these pigments and this is where the name carotene was derived.
Beta carotene must be converted into vitamin A before it can be used by the body. Only one third of the carotene found in food is converted to vitamin A the rest being excreted.
